Baked dorade with tomatoes and capers
Baked fish, tomatoes, sweet peppers and capers are an ideal combination for both lunch and dinner. While choosing fish, we settled on dorado – one of the most popular and easy fish to prepare. In addition it is rich in vitamins A, D and group B, Omega-3 and Omega-6 fatty acids and many useful trace elements. Dorado is low in calories, and therefore it is highly appreciated by adherents of proper nutrition.

Ingredients:
1 dorado;
7 tbsp olive oil;
1/2 red onion;
1 pack of cherry tomatoes;
1 large bell pepper;
2 tbsp capers;
2 tbsp red wine vinegar;
2 tbsp fresh oregano (or 2 tsp dry);
lemon juice to taste;
fresh herbs to taste;
30 g of butter;
salt and pepper to taste. ⠀
Preparation:
1. Preheat the oven to 200 °C.
2. Chop the onion, bell pepper – strips, cherry tomatoes – in half.
3. Mix onion, cherry, bell pepper, capers, wine vinegar, olive oil, salt and pepper.
4. Put the dorado to a baking dish, brush with a tablespoon of olive oil, season with salt and pepper, and dice the chopped butter. Fill the empty space in the mold with vegetable mixture.
5. Bake for 40-45 minutes at 200 ° C.
6. Sprinkle the finished dish with oregano and herbs. ⠀
