Here is an easy recipe of a vegetarian pumpkin soup, just one of many others. Although the main ingredient is the same, the taste is still different from one recipe to another - mainly due to spices. Give it a try!
RECIPE Vegetarian pumpkin soup
Ingredients (for 4 servings):
- half a large pumpkin (approximately 400 grams)
- 1 large onion
- 1 large tomato (or 2 small), chopped
- 1 small ginger, about 3 cm in length, peeled and grated
- 1 large potato, into cubes
- 1 carrot, into cubes
- 2 cloves of garlic
- 2 glasses of water or vegetable broth
- 2 tbsp olive oil
- 1/2 tsp ground coriander
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/8 tsp ground cloves;
- 1/8 tsp ground cayenne pepper;
- 3 tbsp cream
For serving
- pumpkin
- yogurt or sour cream;
- pumpkin seeds;
Recipe: Peel the pumpkin and chop coarsely. Bake in a preheated oven to 200ºC until soft.
Cut onion into half rings and simmer for about 7 minutes over medium heat.
Add potatoes, carrots and coriander. Cook for 20 minutes, stirring every five minutes to cook vegetables evenly.
Then add garlic, ginger, tomatoes and cook for another 10-15 minutes, stirring again every five minutes.
Add water or broth, paprika, salt, cloves and cayenne pepper and mix well. Cover and simmer for 15 minutes.
Beat everything in a blender, do not forget about the pumpkin in the oven. Beat the mixture until it becomes smooth, add cream.
For serving in pumpkins, it is better to take decorative varieties - they are dense and will not fall apart in the oven.
Carefully cut the lids of pumpkins, peel the seeds and bake for about 40 minutes in the oven, or until the rim turns golden. Pour the pumpkin soup, add yogurt and garnish with seeds.
As a beverage, we decided to cook Harry Potter???? cream ale. We suggest trying this simple variation, which will appeal to both children and adults. Melt butter with sugar, add milk and cinnamon. You can decorate with cream on top.
